Muffins
A plain, quick basic muffin batter that takes blueberries, raisins, dates, cheese or bacon.

Ingredients
- 256 g all-purpose flour
- 3 tsp baking powder
- ½ tsp salt
- 96 g white sugar
- 1 egg
- 225 ml milk
- 56 ml vegetable oil
Method
- Heat the oven to 205°C (400°F) and line a 12-hole muffin tin with paper cases.
- Stir the flour, baking powder, salt and sugar together in a large bowl and make a well in the middle.
- In a small bowl or jug, beat the egg with a fork, then stir in the milk and oil.
- Pour the egg mixture into the well all at once and mix quickly and lightly with a fork until just moistened. Don't beat it, because the batter should be lumpy. Stir in any extras now (see notes).
- Spoon into the paper cases and bake for 25 minutes, until golden.
Notes
- For blueberry muffins, add 1 cup of fresh blueberries.
- For raisin or date muffins, add 1 cup of finely chopped raisins or dates.
- For cheese muffins, fold in 1 cup of grated sharp cheddar.
- For bacon muffins, fold in ¼ cup of crisp cooked bacon, broken into bits.
